I think I remember why bunnies/eggs were for Easter.
I think it was Norse culture that associated fertility with bunnies. They would celebrate the coming of spring with large festivals devoted to fertility of both the land and population. Eggs also came from this but I forget whose it was.
Church saw this and quickly adapted to this, having ornate eggs made, usually jeweled encrusted and merely added this to Easter, since Easter was mostly during spring.
Though of course, I could be wrong. xD
It's also where you get Christmas! But that's another story....
